Try this fresh milled flour version of the viral cottage cheese protein bagels!
I love recipes that have just a few ingredients. When I find one that works well with fresh milled flour, it’s even better.
We all know that fresh milled flour recipes can be tricky. They often require more time and patience versus using all purpose flour.
Despite the learning curve, I’ve found there are some great ways to make fresh milled flour recipes that don’t take all day long to make.
Protein bagels happen to be one of the best examples I’ve found of a quick fresh milled flour bread. That practically sounds like an oxymoron, but it’s true!

Protein packed bagels
Cottage cheese is the secret ingredient in these bagels. It’s the binding ingredient, the all-in-one moisture, and it also gives the bagels a nice boost of protein.
1/2 cup of hard white wheat has approximately 8 grams of protein per cup (sources vary). And 1/2 cup of spelt flour has about 10 grams of protein.
In 1 cup of small curd cottage cheese, you can expect around 25 grams of protein.
So for this recipe, you are looking at around 11 grams of protein per bagel, minimum. Add a cooked egg to your bagel sandwich at breakfast, and you have an easy protein-packed breakfast.
Hard wheat versus soft wheat
Most people would suggest using soft white wheat for bagels. You are welcome to do this.
Soft white wheat is a little lower in protein, if that’s important to you. But many people prefer to use soft white wheat with non-yeast recipes, like this one.
I’ve used both hard white wheat and spelt interchangeably in many non-yeast recipes (see our waffle recipe and oatmeal spelt cookies, for example.)
I actually prefer the taste of most other grains versus soft white wheat- for most recipes.
You can definitely experiment with your favorite grains and see how the flavor and texture varies. To each his own!
How To Make Easy Protein Bagels
You’re going to love how easy these bagels come together. There is almost no kneading, and NO boiling.
First, add 1 cup of cottage cheese to a blender and blend until smooth. I used my Ninja blender, but even my small Magic Bullet blender would work for this.
Dump the blended cottage cheese into a mixing bowl.
In a separate bowl, mix the hard white wheat flour, the spelt flour, baking powder, baking soda, salt and sugar with a wire whisk.
Add flour mixture to cottage cheese and mix until incorporated with a dough hook (don’t over mix).
From there, you’ll simply knead the dough a few times with your hands on a floured surface, just to smooth it out a little.
Then divide into fourths; shape, and brush with egg wash before baking.
After the egg wash, you can top with any toppings you’d like:
- Everything Bagel seasoning
- Brown sugar & cinnamon mixture
- Sesame seeds
We added mini chocolate chips to some of our bagels, just before shaping them. Use whatever toppings and fillings you like. Dried blueberries, cranberries and raisins are great, too.

Protein Bagels with Fresh Milled Flour
Quick & Easy protein bagels with fresh milled flour make a filling take-along breakfast.
Ingredients
- 3/4 cup freshly milled hard white wheat flour
- 1/2 cup freshly milled spelt flour
- 1 cup cottage cheese
- 1.5 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons sugar
- 1 egg white
Instructions
- Blend cottage cheese until smooth; add to mixing bowl and set aside.
- Whisk together flours, salt, baking powder, baking soda, and sugar.
- Add flour mixture to cottage cheese mixture. Mix on low speed just until all ingredients are incorporated (don't over mix).
- Turn dough onto a very lightly floured surface. Knead with your hands just a few times to smooth out the dough a little.
- Divide into 4 pieces. Add a small amount of flour to your work surface as you're shaping bagels, if dough is too sticky. Add any fillings such as mini chocolate chips or raisins just before shaping.
- Shape into 4 bagels and place on baking sheet with parchment paper.
- Brush each bagel with egg white.
- Add any toppings desired.
- Bake at 375 for 20-25 minutes, until golden brown.
- Allow to cool slightly, then slice and enjoy!
